These muffins are so easy to make, 😋 delicious for us mama's (or anyone really) and the littles love them 🙌🏻
This recipe will make 12 mini muffins, so I would double it if I were you! Otherwise you will be making them again the next day!
Preheat oven to 350 degrees. Lightly spray a mini muffin pan with coconut oil spray, or just use mini muffin liners.
- 1 1/2 cups rolled oats (I used whatever I had in my pantry, today was large flake oats and some gluten free oats. Just used the gluten free oats if you want it GF!)
- 1 cup pumpkin puree
- 1/4 cup unsweetened applesauce
- 1 Tbsp. vanilla extract
- 2 Tbsp. melted coconut oil
- 1/4 cup unsweetened almond milk
- 1/4 cup pure maple syrup
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 tsp. cinnamon
- coconut oil spray
Put all of the ingredients in a food processor and mix until it is all combined. Put one small scoop into each muffin liner. Bake in the oven for 15 minutes or until a toothpick comes out clean. Honestly, I find these are a little mushy so I bake them for at least 20 minutes if not a bit longer. Just keep an eye on them to make sure they don't burn.
